Joan's Gruyère Cheese

Gruyère is a hard yellow Swiss cheese made from cow's milk.

It is named after the town of Gruyères in Switzerland

Gruyère is sweet but slightly salty, and its flavor varies widely with age. It is creamy and nutty when young, and with age it becomes more assertive, earthy, and complex.

Gruyère is excellent on onion soup

Gruyère is generally known as one of the finest cheeses for baking, due to its distinctive but not overpowering taste.

This is Gruyere on 12/05/121 after ageing for about twelve months

Note the holes

The flavor was assertive, complex, nutty and absolutely delicious
