Made: July 31, 2012 from Goat's Milk
Ready to Eat: September 31, 2012

Tomme is a type of French cheese.

Tomme has a pale white color and it has a semi-soft to firm paste.

Tomme cheese has an intensely nutty taste.

The term "Tomme" is a generic name for a class of cheese produced in the French Alps and in Switzerland. Tommes are often produced from skim milk. However, my Tomme was made from whole goat's milk.

There are many varieties of Tommes, which are usually identified by their place of origin. The most famous of these is Tomme de Savoie.

Tomme is traditionally used to make aligot and truffade, two Auvergnat dishes combining melted cheese and mashed or sautéed potatoes.

These are the notes made by the cheesemaker (i.e. Joan)
the circled number 56 indicates that this is the 56th wheel of cheese that Joan made.
