Gouda Cheese


Made: October 18, 2012 from three gallons of Goat's Milk.
Ready to Eat: December 18, 2012

Gouda cheese originated in Holland. It is named for the Dutch city of Gouda. The cheese is made from cultured milk that is heated until the curds separate from the whey. Some of the whey is then drained, and water is added. This is called "washing the curd" .
The result is a sweeter cheese, as the washing removes some of the lactic acid. Only about ten percent of the mixture is the curds, which are pressed into circular molds for several hours to form the resulting cheese.
